A new Vietnamese sandwich restaurant will welcome Bánh Mì-nions through its grey exterior and into a pickled carrot heaven!

A new restaurant called Paris Bánh Mì is coming to 1021 East Colonial Drive, right across the street from an in-the-works 10,648 sq. ft. 6-unit retail strip and to the same block as popular favorites Lineage Coffee and Lazy Moon Pizza.
According to the concept rendering provided to the City by the restaurant's developers, the exterior will feature large picture windows, grey plaster walls, dark grey trim, and white letter signage. The interior will have several white bakery cases.
Bánh mì is a Vietnamese sandwich consisting of a split-lengthwise baguette filled with chả lụa (pork sausage), coriander, cucumber, pickled carrots and daikon combined with condiments from French cuisine such as pâté along with jalapeño and mayonnaise.
$70,000 will be spent for interior and exterior renovation. Paris Bánh Mì applied for $14,800 assistance from the City for new windows and doors, signage and painting. The Small Business Facade Review Committee recommended approval for the funding June 18th. Final approval will be made by City Council during their Monday July 9th meeting.
