We told you that food halls were the new trend coming to Orlando and that's already somewhat already present. With East End Market, Plant Street Market and other, we are seeing the seeds that have driven the excitement for the city's burgeoning food hall scene.

One particular food hall that started out as a rumor heard within the walls of City Hall by, well, me, received lots of attention last week.
The hall will be developed by local notable developer Craig Ustler and will be located within the downtown Creative Village project of which he is lead creative.
We had the chance to ask Ustler a few questions about his project. Below are his answers.

Hinckley's Fancy Meats Instagram Account Goes Behind the Scenes of a Butcher's Life

We told you in October when Hinckley's Fancy Meats (Instagram | Website | Facebook), a locally sourced artisanal meat company, had its soft opening inside the East End Market building. Owner Matt Hinckley cuts up a whole pig in the back kitchen at East End, prepares everything by hand and displays it in a front glass case just to the left as you walk in the front door. N

Their Instagram account is mostly made up of lovely photos of meat cuttings and friendly pigs at the farm. But two photos of theirs did not hold back in showing the butcher's daily behind the scenes reality.

Kappo Threatens to Close, Wins Their Case, Then Closes Anyway

In August, when the DBPR demanded Kappo build a sneeze guard onto the top of their serving bar and address all 28 of their Health Violations. Kappo lawyered up, refused to speak directly with the state agency, started an online petition and threatened to shut down.

The DBPR backed down and allowed them to operate without a sneeze guard.

They are the only restaurant in Orlando that serves uncooked food without this requirement.

Three months later they shut down anyway, saying they're looking for a new location for their restaurant. They will keep their spot in East End Market and operate it as a store.

Colette's Clean Eats Provides the Healthy in 4Rivers City Hall Restaurant

4Rivers was required by City of Orlando to provide healthy options on it's downtown Orlando location's menu as a condition of getting it's 20-year contact to be inside City Hall.

4Rivers outsourced that task to a Longwood-based meal prep delivery/pick-up service called Collette's Clean Eats (Website).

Collette's Clean Eats is a full-service operation for busy, healthy people, similar to Farm-Haus (Website) in Orlando.

The business is owned by Collette Haw, a former Personal Chef and employee of Ravenous Pig.
The products offered at the City Hall 4Rivers, chicken salad sandwich, tuna salad in a box and grilled chicken sandwich, do not reveal the full potential of the food delivery service.
Their delivery/pick up meal menu includes soup, salad, sides, lunches, entrees, snacks and even a full Thanksgiving Day menu.
